
Şöbiyet
Concealed inside the crisp layers of folded pastry is crushed walnuts, or a mixture of semolina - based custard and crushed pistachio nuts. The pastry is baked until golden and sweetened with syrup. The Şöbiyet “pronounced ‘Sher-be-yet’” with a walnut filling is similar in texture to the Classic Baklava, being crunchy on the outer and inner layers. The Şöbiyet with a custard filling has a soft texture on the inside whilst retaining the crunchy texture on the outer layer.
The walnut filled Şöbiyet has a longer shelf-life and is ideal for sale in cafes, restaurants, take-away stores, and retail by the kilo or for functions. The custard filled Şöbiyet has a shorter shelf-life and is better suited for functions or quick consumption.
